The wicked witch was literally green with envy, starved of all other emotions. When the water was thrown at her - water - symbol of emotion and steam released - her essence was being recycled into the oneness - at least the way I interpret it.

The Rainbow is the rainbow of possibilities - the arc of life rather than black & white thinking or the shades of gray.
