Science, math and language itself belong to the finite. They are boundaries of the knowable as in hard science, math, physics etc. Most human endeavors seek to reduce in order to explain, and while there is value in that it ultimately falls short.

The knowing you write about is knowing related to rational modes of thought for the most part. The mystic and the shaman's knowing skims the edges of the infinite. Knowing from the seeker's perspective once fully developed through Being experiences mystery and higher realms of consciousness for moments/minutes and perhaps a little longer. Ego, then reclaims the experience and the rational/analytical lays claim to something it cannot understand, own or possess as it may want.
